In Tamil Nadu, especially in Madurai, parotta is more than just food — it’s an emotion. This flaky, layered flatbread is a street food staple and comes in many mouth-watering varieties like Veechu Parotta, Mutta Parotta, Chilli Parotta, Kothu Parotta, Paneer Parotta, Settu Parotta, and the soft and crispy Bun Parotta.

Ingredients
- Maida (refined flour): 500 grams (approx. 4 cups)
- Egg: 1
- Milk: 2 tablespoons
- Water: 1 cup
- Salt: 1½ teaspoons
- Sugar: 2 teaspoons
- Oil: as required
Recipe
Prepare The Dough
- In a bowl, beat the egg and mix in milk, water, salt, and sugar. In a wide mixing bowl, add maida and pour in the egg mixture.
- Knead the dough thoroughly, just like how chef do it in hotels, stretch and fold it well on a flat surface.
- Sprinkle 3 teaspoons of maida on the kneaded dough and knead again.
- Add 1 tablespoon of oil, cover the dough with a cloth, and let it rest for 2 hours.
Shape The Dough
After resting, roll the dough into small balls. Place them in a bowl with 2 tablespoons of oil and drizzle a little oil on top. Let it soak again for 30 minutes.
Form The Bun Parottas
Once well-soaked, apply oil to your hands and roll each dough ball thinly. Fold and shape them into a round bun shape, then gently flatten.
Cook The Parottas
Heat a dosa tawa or flat pan. Place the shaped dough on the tawa, drizzle some oil, and cook on both sides until golden and crispy.
And with this, Your Madurai-style Bun Parotta is ready to serve. Enjoy it hot with salna (gravy) or chutney for an authentic Tamil Nadu experience right at home.
