Parkin is a northern English cake, rich in oats, dark with treacle and gently spiced with ginger. In a break with tradition, I’ve added pears, which sit quietly at the tin’s base, only revealing themselves once the loaf is turned out. The pears soften as they bake, turning almost translucent and offering sweet butteriness against the dark, nubbly crumb. Delicious as a fresh, warm cake served with a dollop of creme fraiche, it settles into a satisfyingly denser texture if left overnight.
