Why restaurant roast potatoes get crispier than the ones you make at home

You can roast the same potatoes at home and still end up with a very different result from the plate served at a restaurant, and the difference is often decided before the potatoes even go into the oven. Professional kitchens commonly parboil the potatoes first, roughen their surfaces, dry them properly and then roast them in hot fat. Each step changes what happens to the potato during cooking. So the real question is, what are chefs doing differently?

IT STARTS WITH BOILING, NOT ROASTING

Many cooks boil the raw potatoes briefly first instead of putting them straight into the oven. This partially cooks the potato while softening its outer layers, and begins gelatinising the starch. Research on potato processing has found that blanching can improve colour and texture partly through starch gelatinisation.

The final crust is built from the potato’s surface, and once the pieces are partially cooked, their softened edges can be roughed up, which creates a more irregular, starchy surface. When that surface meets hot fat and dry oven heat, there is more material available to form a crisp crust. Tests that compare roasting methods have found that boiling before roasting produces a noticeably crisper exterior than roasting raw potatoes directly.

WHY SOME CHEFS ADD BAKING SODA

Adding a little baking soda to the boiling water is another small trick that has become popular in roast-potato recipes. Baking soda makes the water more alkaline, and alkaline conditions weaken pectin in plant cell walls, so the outside of the potato breaks down more readily. That creates the rough, uneven surface that can turn crisp during roasting.

The point is to change the surface texture before roasting. Used in excess, though, baking soda can affect flavour and make the potatoes unpleasantly soft, so this is one technique where more is not better.

DRY POTATOES BROWN BETTER

If the pieces go straight from the water into the roasting tray, some of the oven’s heat is spent evaporating that water before the surface can become properly dry and brown. Drying the potatoes first gives the hot fat a better chance to coat the surface and allows browning to begin sooner. Food-processing research also shows that drying after blanching can improve the crispness of potato products. Moisture released during cooking has less opportunity to escape when too many pieces are packed together, and giving the potatoes enough space helps the surface stay exposed to dry, hot air rather than sitting in a humid pocket.

THE FAT MATTERS, BUT SO DOES THE TEMPERATURE

Restaurants can use different fats for roast potatoes, including vegetable oils and animal fats such as duck fat. A high-smoke-point fat is useful when roasting at high temperatures because it can withstand the heat without breaking down or smoking excessively. Duck fat also contributes its own flavour, which is one reason it is popular for richer roast potatoes.

Around 425°F (about 220°C) is a common target temperature in roast-potato recipes, although the ideal temperature depends on the oven, potato size and cooking method. High heat helps the surface lose moisture and promotes browning reactions that produce the darker colour and roasted flavours that are associated with a crisp crust.

THE BROWN CRUST HAS SOME CHEMISTRY BEHIND IT

That golden-brown surface is partly the result of the Maillard reaction, which is a group of chemical reactions that occur when heat acts on amino acids and reducing sugars. It is responsible for much of the colour and flavour that develop when foods are roasted, baked or fried. Potato processing research has also linked Maillard browning to the formation of acrylamide, so very dark browning is not something to deliberately chase.

Heating changes the starch structure, while continued exposure to dry heat removes moisture from the outer layer, and the result is a contrast between a dehydrated, crisp exterior and a softer interior. Research on fried potato texture describes starch gelatinisation, water loss, cell changes and browning as several of the processes that are involved in creating that crisp structure.

EVEN THE SHAPE OF THE POTATO MATTERS

Cutting the potatoes into roughly equal-sized pieces sounds basic, but it affects how evenly they cook, since a small piece can become browned and crisp while a much larger piece is still cooking through. Keeping the pieces similar in size reduces that problem, and also gives you more consistent surface exposure to the hot tray and fat, which helps the pieces brown at roughly the same rate.

Once they come out of the oven, give them a short rest before serving rather than immediately covering them. A little cooling allows the surface to firm up, while covering the potatoes can trap steam and soften the crust.

SO, WHAT IS THE RESTAURANT TRICK?

The useful sequence is parboil, roughen, dry, coat with hot fat and roast at high heat, while keeping the potato pieces evenly sized, and that sequence works because each stage prepares the potato for the next one. Boiling changes the starch and softens the outer tissue; roughening increases the textured surface; drying limits excess surface moisture; and high-temperature roasting drives dehydration and browning. That is why the restaurant version can have a crunchy shell and fluffy centre even though the ingredient itself is one of the simplest foods in the kitchen.
